Oh hey! So I want to write this post as quickly as I made the pasta! I'm Jess sayin' this was the quickest pasta I've ever made!! It was So so SOOO good! So cheap and also super easy to make; I'll call this "Jess $8 Tortellini Pasta". This cajun creamy goodness was made in one hour (kitchen clean up included) I hope you enjoy it Jess as much as I did! So for those that follow me on other social media outlets (Snappidity & Instagram) you may have been given a sneak peek. My secret Ingredient to this dinner was using leftover chicken that I made a few days before! I strongly suggest chopping up chicken and freezing it OR if you like the recipe you can just make some chicken. I also shop at low-cost stores where they offer what some refer to as "generic" versus "brand" items, but if you can cook it shouldn't matter where you shop I'm Jess Sayin now don't get me wrong there are certain items that you have to run into the fancy places for, but at this point in my adulting---I'm jess shopping for cost-efficiency not fancy Instagram organic tummy flat coconut water. :) But anyways!
Here's Jess What You Need:
- Leftover chicken breast chopped or I also like the frozen chicken selects
- Cajun Andouille Sausage diced
- One cup of Pinot Grigio or white wine of your choice
- One 16oz of Heavy Cream
- Cajun seasonings mix (Chili powder, cumin, red chili flakes, salt, pepper)
- Onion chopped
- Minced garlic
- One packet of Tortellini (refrigerated section)
In a skillet, add olive oil, onion, and garlic; once the onion and garlic are translucent begin to add in the cup of white wine. Give it a good stir, jess make sure it is mixing in well..let it boil a bit. After that go ahead and add in all 16 oz. of heavy cream; let that start to cook up real good jess don't forget to stir it so that it doesn't burn. Remember to cook on a medium level heat. At this point throw in those seasonings, your kitchen should smell divine!! I'm Jess Sayin if it doesn't you might have missed something! Now your chicken should be cut up and ready to be thrown right into the pan with the creamy sauce, although my chicken was leftover chicken breast I under-cooked them at the time so that when I warmed them up they wouldn't be dry & taste like we were eating chalk, so if this is your method too; consider putting the chicken in as soon as you've got a good boil going to help cook through some of those undone parts.So..now my chicken is co-mingling and getting all deliciously flavored, you want to take your sausage and dice them into fours, its jess a personal preference but slice them how you like. Brown the sausage in a skillet after it is ready go ahead and introduce andouille to the rest of the cream sauce! Now that the creamy alfredo is working its magic, we can prepare the Tortellini pasta which you just boil it on high. The Tortellini pasta takes about 4 minutes at best to cook, when its done, drain and add the tortellini into the creamy sauce. Keep folding it into each other that helps to mix it all together. Easy Peazy Tortellini! Garnish how you wish, with cheese or your favorite garnishing herb!
