Jess Fry some Chicken Skrips (Strips)

Oh Hey!
I hope everyone is enjoying the first snow in Chicago, for the holiday season! #Burr 
Anyway! I'm sure everyone is kind of thinking, OK I know how to make Chicken Skrips..and that's cool and all but I'd Jess like to show you another way to get in the kitchen and throw down! So I hope you enjoy my egg-battered Chicken Skrip recipe. 
Jess what you need:
Chicken Tenderloins unthawed 
Paprika 
Salt
Pepper
Garlic Salt
One to Two Eggs
Flour

I used my fry daddy, but Jess in case know you can still achieve the same results without using a deep fryer although it's easier! 

Season chicken with all the following seasonings to taste, if you don't know how to season chicken, if your chicken doesn't LOOK seasoned it's probably not. I also recommend allowing time to brine or marinate chicken it helps make sure chicken is juicy and tender. After seasoning, take one to two eggs (basing this off the number of pieces you will be cooking (more than 6 tenders use two eggs). In a medium to large bowl, Whip the egg like you are about scramble it. Once you've beat the egg, take your seasoned chicken and dip it into the egg. After dipping it into the egg. Take your flour and Jess dredge (dip and remove dip and remove) until the chicken skrip is fully coated. Once you've done that. Fry them chicken skrips up! With my fry daddy I'd say I fry them in about ten minutes or less. Obviously you want a golden brown look, drain the excess grease, and enjoy! It's really Jess that simple guys! Jess $8 Tortellini Pasta

Oh hey! So I want to write this post as quickly as I made the pasta! I'm Jess sayin' this was the quickest pasta I've ever made!! It was So so SOOO good! So cheap and also super easy to make; I'll call this "Jess $8 Tortellini Pasta". This cajun creamy goodness was made in one hour (kitchen clean up included) I hope you enjoy it Jess as much as I did! So for those that follow me on other social media outlets (Snappidity & Instagram) you may have been given a sneak peek. My secret Ingredient to this dinner was using leftover chicken that I made a few days before! I strongly suggest chopping up chicken and freezing it OR if you like the recipe you can just make some chicken. I also shop at low-cost stores where they offer what some refer to as "generic" versus "brand" items, but if you can cook it shouldn't matter where you shop I'm Jess Sayin now don't get me wrong there are certain items that you have to run into the fancy places for, but at this point in my adulting---I'm jess shopping for cost-efficiency not fancy Instagram organic tummy flat coconut water. :)  But anyways!

Here's Jess What You Need:
  • Leftover chicken breast chopped or I also like the frozen chicken selects 
  • Cajun Andouille Sausage diced
  • One cup of Pinot Grigio or white wine of your choice 
  • One 16oz of Heavy Cream 
  • Cajun seasonings mix (Chili powder, cumin, red chili flakes, salt, pepper)
  • Onion chopped
  • Minced garlic 
  • One packet of Tortellini (refrigerated section)

In a skillet, add olive oil, onion, and garlic; once the onion and garlic are translucent begin to add in the cup of white wine. Give it a good stir, jess make sure it is mixing in well..let it boil a bit. After that go ahead and add in all 16 oz. of heavy cream; let that start to cook up real good jess don't forget to stir it so that it doesn't burn. Remember to cook on a medium level heat. At this point throw in those seasonings, your kitchen should smell divine!! I'm Jess Sayin if it doesn't you might have missed something! Now your chicken should be cut up and ready to be thrown right into the pan with the creamy sauce, although my chicken was leftover chicken breast I under-cooked them at the time so that when I warmed them up they wouldn't be dry & taste like we were eating chalk, so if this is your method too; consider putting the chicken in as soon as you've got a good boil going to help cook through some of those undone parts.So..now my chicken is co-mingling and getting all deliciously flavored, you want to take your sausage and dice them into fours, its jess a personal preference but slice them how you like. Brown the sausage in a skillet after it is ready go ahead and introduce andouille to the rest of the cream sauce! Now that the creamy alfredo is working its magic, we can prepare the Tortellini pasta which you just boil it on high. The Tortellini pasta takes about 4 minutes at best to cook, when its done, drain and add the tortellini into the creamy sauce. Keep folding it into each other that helps to mix it all together. Easy Peazy Tortellini! Garnish how you wish, with cheese or your favorite garnishing herb!

Jess Chef'n Dill Salmon

Oh Hey!
What's poppin'! So it's hot, hello summer lol but I'm so tired of eating out! I know the summer is to be enjoyed with festivals! Rib Fest, Food truck fest, Eat Fest, Weddings, Rooftops, and Drink Fests! Jess so many opportunities to eat badly LOL! So with that, I try and eat healthy during the week TRY is the keyword here people! So anyway, no one wants to slave over a hot stove after working a full day of work plus after work errands! So what's quick and what's easy in the summer! Yummy Salmon... 
Jess What You Need:
2 Salmon 5oz filets 
Fresh Dill
Garlic 
Butter
Pepper
Sea Salt 
Microwaveable Bowl

Let's Jess make this easy, get a microwave safe bowl and put the following ingredients in this bowl: two-three tablespoons of butter, 2 fresh dill stems ( remove from stems) , & half teaspoon of garlic. I also added a teaspoon of jerk seasoning because y'all know I like it spicy! No need to stir it up just stick it in the microwave for 30 secs. Season your salmon lightly with salt & pepper. After the butter melts slather YAS SLATHER (slather = slay and lather) your pieces of salmon front to back. With this dill butter mixture. In my grill pan I placed a very small amount of oil olive and pan fried my salmon. Flip them over, after about 5 minutes or until a nice sear. I added an additional stem of dill and a dab of butter while it was cooking to infuse more flavor! I'm telling you, 30 minutes you'll be de done and eating! 
I Jess made a side of broccoli and it was delicious! Jazz up your broccoli however you see like it! I enjoy sautéed butter and minced garlic on mine! Oh I also felt fancy  and had some cajun remoulade as a little sauce! I hope you comment, share, like & enjoy!

A Turkey Burger Jess Gone Wild!

Oh Hey! 
I know turkey burgers can be sooo boring and that's probably why I only eat them when I'm able to dress them up! Last night was one of those nights, I didn't really want a turkey burger. However, when it's lazy Sunday and going to the store just seems like the worst idea.. You deal! Additionally eating semi healthy isn't such a bad idea either! 
I'll preface this recipe & say, it's not the most healthy with the spree of cheese but you have the option to not add as much or any for that matter. Jess know it's a turkey burger gone wild! 
Jess What You Need:
Ground Turkey 
Onion sliced 
Green, Red, or Yellow Peppers sliced 
1 Zucchini sliced 
1/2 garlic clove 
Frozen hash browns 1 cup
Butter 
Basil
Salt
Pepper 
Garlic salt 
Olive oil 
*serving estimated for 4 burgers*

First season burgers, because turkey burgers can taste flavorless I choose to season with basil, salt, pepper & a pinch of crushed red pepper. Be generous with the basil this will help add an unexpected flavor to your burgers. In a medium skillet add two table spoons of butter, as butter melts; add in frozen hash browns season lightly with salt & pepper. Let this cook until hash browns at brown.  
In a grill-marked skillet, add some olive oil to begin grilling your veggies. While veggies are cooking go ahead & add your turkey burgers in the same skillet! Each burger should take approximately 10 minutes or so, please check the temperature as turkey burgers need to be cooked all the way through. Now the fun stuff, adding cheese! It's your choice if you want to have a healthier meal but I used low fat cheese if it makes any of you feel better .. Haha Jess Sayin!  Now  for plating, take a handful of hash browns for the bottom of your plate and then add your veggies on the side and lay that wild turkey burger right on top! I really enjoyed this, I recommend maybe having some BBQ sauce, Ranch, or Ketchup on the side! Jess Spicy Buffalo Chicken Dip

Oh hey!
As the holidays, Super Bowl  and BBQs approach and you're  making dishes or looking for easy appetizers to serve your guest; consider my buffalo chicken dip! It's yummy and honestly super easy to make! Jess trust me, I've never led you all wrong before!
Jess What You Need
6 Skinless Chicken Breast 
(serves about 15)
Ranch Packet 
Bottle of Spicy Ranch 
Red Hot Sauce 
2 packets of Cream Cheese 
Pepper Jack Cheese 
Salt
Pepper 
1 cup of water 
Skillet
Crockpot on high (4hours)

Brown chicken in a skillet on both side for about 5 minutes a side, then all in the crockpot: season your chicken very lightly with salt and pepper. 
Add 1 cup or more of red hot sauce, 2 packets of cream cheese, add 1/2 cup of spicy ranch dressing and about a 1/2 of the ranch packet. Add one cup of water  and stir it all together and close the lid on the crockpot. 
In about 3.5 hours, your chicken should be done and it should be easy to shred the chicken with a fork. After completely shredding your chicken, you should see a consistency of dip kind of creamy and thick; if it's too watery I have added a nice heap of sour cream. At this point everything should be ready, add as much pepper jack cheese that can cover the top and cut your crockpot on warm and let the cheese melt. I usually serve it with tortilla chips but I imagine baguettes would work too! I hope you guys try this out for your Fourth of July appetizers as your guests wait for the ribs to be ready lol (I'm Jess Sayin, y'all know the food is never ready) the least we can do is give our guests an amazing wait experience 😊

Jess Healthy Bowtie Pasta

Oh Hey!
Last week I made this hearty yet healthy bowtie pasta dish. I'm over wheat pasta and over linguine noodles as well so I'm like lets Jess use some bowtie! 
 This recipe was so easy and so amazingly healthy you wouldn't believe it! It's great for dinner or even lunch if you can ration out your portions correctly! I'll give you my healthy version and you can Jess add your own twist to it! 
Jess What You Need:
1 pound Ground Beef 90% Lean
3 Turkey Italian Sausage Links 
Green, Yellow, & Red Peppers
Onions diced 
Fresh pressed Garlic or Minc Garlic 
3 cups of spinach
1 cup of Mushrooms
Three cheese or veggie Tomato Sauce 64oz Jar (which ever brand you prefer, more recently I've been buying generic & jess jazzing it up w/ seasonings 
Half a box Bow tie Pasta
Olive Oil
Sea Salt 
Pepper 
Italian Seasoning
Basil 
Oregano 

In a medium sauces pan, with two caps of oil sautée all your veggies(do onion and garlic first, then your peppers, mushroom and spinach).. I Jess choose to cook my veggies in this order because certain veggies cook faster than others. After everything has been cooked, remove from skillet. Now we need to brown our meats, I remove the turkey Italian sausage from the casing-- you don't have to I jess think it helps with consistent food textures plus it is healthier! Anywho, I brown both ground beef and sausage in the same pan because all of the flavors from your  veggies will add extra taste in addition to you seasoning your meat with salt, pepper, plus any of your favorite Italian seasonings. After your meat is browned, drain any excessive grease -- if you like to keep a little that's ok too, Jess be mindful of how much you save. Be sure at this point that you've started boiling your bow tie noodles. Cook for about 8minutes. In a medium pot add your favorite tomatoe sauce, because I used a generic brand this time I added ALOT OF my own seasonings. I encourage you to Jess season with Italian, basil, and oregano-- if you have any fresh basil ((yummers)) add that your sauce and a two table spoons of tomato paste. As that begins to cook, add in your veggie, meat, and lastly your bow tie pasta! 
The final and most important step! Eat!!

Jess Throw it in a Crockpot Jambalaya

Oh Hey! 
As many of you can see and read; many of my blogs are about easy, fast, delicious, and healthy meals! With a busy summer ahead, I still need to be cost cautious and try to avoid stopping at every drive thru or fast food BBQ place yummm it's so tempting though! So, I jess made a crockpot Jamabalya-- yup I swear did and it turned out so good! 
So below will be the recipe for my crockpot Chicken and Andouille Turkey Sausage Jambalaya 
Jess What You Need:
 5 skinless Chicken Breasts
3-4 Andouille Turkey Sausage links diced
Fresh garlic cloves
Red, Green, Yellow Pepper diced
Onions
One can of diced tomatoes 
One can of Tomato Paste 
1 cup of chicken broth
Season the chicken to taste right in the crockpot sea salt, grind pepper, and garlic salt is all I really ever use.. 
Add all things except Turkey Sausage in the crockpot for 2-3.5 hours on high ( my crockpot setting is set in 4 hours high ,6,8, or 10 hours low. 

*Anywho* Add the Andouille turkey Sausage about an hour before chicken is ready

**We like it spicy so I diced up jalepenos and cooked w/ Jerk Seasoning as well 

See told you guys it was Jess that easy! Jess throw it all in the crockpot and fill your nose with the deliciousness in the air! Once the chicken is starting to cook don't forget to start shredding it. Take your fork and literally shred it by using the sharp side of your fork to pull the chicken because it's been in the crockpot for atleast 2.5 hours it should be easy if it's a little tough I'd let my chicken cook a bit longer! I also made brown rice on the stove top, which ever rice you decide to make is up to you. I hope you guys enjoy!

Jess Use One Pan Chicken Breast

Oh Hey!
Are you tired of cooking and using a bunch of pots and pans? Me too! So I've been seeing all these one pot recipes but this is honestly something I've been doing for sometime lol not only does it save me clean up time it leaves everything tasting sooooo yummy and flavorful. So let's get to the good stuff, I made a one pan chicken fairly healthy I'd say with the option to be unhealthy lol.. tell me what you think! Well I used two pots ... hey hey the rice needed to be cooked -- Jess Sayin'
Jess What You Need: 
Medium Sauce Pan w/ a lid 
Skinless Boneless Chicken Breast 4oz.
Spinach 1 Bag PreWashed 
Onion finely chopped 1/2 cup 
Garlic finely chopped 1 clove 
Garlic
Cumin
Ground Pepper
Sea Salt
Olive oil 
Red Wine 1.5 Cup 
Jasmine Rice 1 cup (Jess Cook it-- ill explain it below, for those who might not be familiar)


Be sure to clean your chicken. Wash and scrape away any fat. Season chicken to preferred taste with cumin, pepper, garlic salt, & sea salt. In your medium sauce pan, add olive oil and some garlic and onion don't let it burn but nice and translucent and the aroma fills the air throw your chicken in to be cooked. Chicken should cook for about 10 mins on each side at this point the lid on the pan.. some say you don't have to turn your chicken --!! That's not what my mom told me when I learned how to cook lbvs! Once your chicken is almost done -- you don't want to over cook it but if you don't feel it's done; be sure to look it again in total skinless breast generally take no more than 30-35 mins.. Once your chicken is about done, go ahead and add that cup of red wine in the pan after letting that brew for a few minutes, please add in your spinach. At this point cover the pan with a lid. Once your spinach is cooked down, your chicken should be ready as well.

I hope you've started to boil your rice.. 2 cups of water, 1cup of rice. Cover that up! In ten mins your rice should be tender if the water is still in the pot continue to boil your water & taste test to your liking.

And that is it!  One and Done! Easy Quick Delicious meal!

Jess Chef'n One Foil Chicken Dinner

Oh Hey!
So I've been very busy! So busy I haven't cooked a nice home cooked meal in quite some time, but because I haven't had much time to really spend hours in the kitchen, I thought of this quick meal with the help of pintrest. I'm exhausted from eating out and I really want to drop a few pounds before Hennypalooza (Hey I'm jess being honest here #goals) LOL.. So here it is an easy One Foil Chicken Recipe where the hardest thing really is making sure you have foil!

Jess What You Need:
Chicken Tenderloins 2-3 Per Foil OR Skinless Chicken Breast 4oz.
parley, garlic, and jerk rub seasoning 
Green Beans
Carrots
Onion thinly sliced
Green and Red Pepper thinly sliced
Potatoes Yukon or Red sliced like chips
Foil
Olive Oil
Preheat Oven 350

Season your chicken how you'd like to, I went for a parsley, garlic, and jerk kind of deal so I could get the savory and hot kind of meal. We like heat in this house so many of my recipes may suggest jerk seasoning but by no means do you have to add that spice to your life! After slicing your potatoes like medium to thin sliced and slicing your peppers, throw some salt and pepper along with a drizzle of olive oil. Be sure to wash your carrots and green beans, (in my pictures you may see the carrots arrive late--I realized I only had green veggies and cooked them on the side and added them in) but want to let you know its OK to bake them in the initial prep. At this point, take your foil about 10inches, if you have the precut foil wrappers that will make this process so much easier; I had to eyeball it but 10 inches sounds about right :) .. Anyway, Lay your potatoes first I took about 4-5 slices per foil lay it flat then layer next your onions, peppers, I placed the chicken on top and my green beans and carrots on the side. Wrap it tightly and depending on your chicken breast it could be ready in 20-45minutes. Check on it, your veggies will let you know whats going on so if your green beans still look in fresh state you probably have a bit more to go! I told you guys this would be easy!

Breakfus Sammiches

Oh hey! So I have been meal prepping for about a month now and I find breakfast can get boring with eating oatmeal etc. so quite naturally I'm like can't I make a sammich? That's easy? Yet Delicious!?
So here it is!!
Jess What You Need:
Ground Turkey Breakfast Sausage 
Eggs 6-12 eggs 
Green Pepper 1/2 finely chopped 
Onions
Garlic 1 clove chopped up
Spinach 3 cups 
One pack of English Muffins (wheat or white-- Jess your preference) 
 Milk 1 cup 
Salt 
Pepper
Baking Pan 3Qt.
Preheat oven 350

So this takes a little bit of work, but I encourage you to make these sammiches it will make your week easier!
So first I take the ground turkey sausage and make small sausage patties. I usually take my 1/4 measuring cup and use it to form my patty. I also use my food scale to make sure my patties are around at 2-3oz of meat. After doing that, I pan fry them in a skillet with a little bit of olive oil jess to coat the pan so that the patties don't stick. While those are frying, take your eggs (i wrote 6-12 eggs because it depends if you are cooking for one or two folks), green peppers, onions, garlic, 1 cup of milk, and spinach and whisk it all together. Pour the egg mixture into the baking pan and let it bake for about 10-15 minutes you will see that the egg is done once it starts to rise. At this time I suggest lightly toasting your english muffins. So now that your egg mixture is done, I'm sure you are all wondering how am I turning this into a sammich?
Have no fear the directions are here! Take a cup YES a cup or a glass flip it upside and press into the egg bake in the pan... it should form as many circles as you need ideally 5 (if you're prepping for the work week Mon-Fri). You are basically using the cup to "cut" your egg bake. *Hope this makes sense, please let me know if the comments if you need further clarity.* 

Now! At this point all food should be cooked and ready to go.
So..Lets.Make.A.Sammich.!
Whatever type of person you are will dictate how you lay out your sammiches..no judgement from me but I always do
Muffin Bottom.Egg.Meat.Muffin Top..It is jess my preference.

To Store: I usually store them in ziplock bags because it is easier for me to run out the door and jess pop it in the microwave for about 30 secs on a paper towel once i get to work or on my way out the door.

If you are one of those "I jess can't eat a dry sammich" type add honey or jelly. If you are trying to keep it cute i suggest honey because it is much healthier than jelly .. but that's Jess my opinion though!

Jess My Breakfast Cupcakes!

What's poppin people! I've had a few people try this recipe and had some questions so I made some edits and added a picture of the finished product!  I hope you enjoy! ~Jess Chef'n 

What's for breakfast?! Cupcakes!!  So I turned my #brefusCasserole into a portion controlled breakfast option while trying to be summer time fine! It's an Easy way to meal prep your breakfast for the week as well! I've also turned it into a healthy breakfast option which if you've seen my brefus casserole it's a little less healthy the key to eating and loosing weight is portion control! #ImJessSayin
 Jess What You Need:
A 12 cupcake tin 
3 Eggs
2 cups of Spinach 
1 cup of Green Peppers 
1 cup of Mushrooms 
1/3 cup Lactose Dairy Free Milk (you can use milk )
1 lb of Ground Turkey Breakfast sausage 
1/2 cup of Hashbrowns (I prefer simple potato-O'Brien) 
**Cheese is optional**
Preheat oven to 350

In a skillet brown your breakfast sausage once done. In the same skillet brown those HashBrowns. I also recommend giving your green peppers and mushrooms a quick stirfry it's not a must but if you prefer your veggies to be soft do it! After you've sautéed those veggies put it all to the side. 

In a bowl, crack your 3 eggs and pour your milk and whisk. Now let's get all this together. In the cupcake tins begin to layer your HashBrowns 1/4 in each tin, 1/2 cup of your meat (protein), a cup of spinach and sautéed veggies, then pour about 1/4 to 1/2 cup of your egg mixture. Additional direction: I use a measuring cup to pour the egg mixture in the tins.. Shout out to my soror who was like how do you do it without making such a mess! 
It's also optional at this point to add Cheese on top!  Don't worry your tin should look and be very full! Once each tin is full place in the oven I don't use foil over mine but I mean if you feel the need be my guest! 

The breakfast cupcakes should cook for about 10-15 minutes or until eggs is done! You will know they are done once you start to see the egg forming. I usually eat about 2 cupcakes for breakfast and although it appears to be small it's packed with lots of protein and vitamins to jump start your day! Let me know your thoughts! Jess Use a Tortilla for Pizza!

Oh Hey! What's Poppin' Everyone!
So I've been trying to be a healthy human being but the struggle is very real! 1. I Jess Love food! 2. Eating healthy is great but let's Jess be real it's not always easy!! So I wanted pizza like really bad-- lol but I didn't want the calorific power of dough.. So I decided let's Jess use Tortillas!!! Below check out my version of a Chicken Spinach Tortilla "Pizza"..
Jess What you Need:
Whole Wheat Tortillas 
Tomato Sauce
Mexican Shredded Cheese
"Thin" Pepper Jack Cheese
Spinach 
Garlic 
Mushrooms
Onion
Cooked Chicken 
Italian Seasoning
Garlic salt 

Preheat your oven to 350 degree. Once your oven is hot, on a cookie sheet Jess throw your tortillas in for three minutes (a minute and a half on each side). Once you pull those out of the oven, take your tomato sauce and spread it on your tortilla now sort of crispy shells. Season it using your favorite pizza seasonings, i prefer Italian seasoning and garlic salt to add yummy flavors. After that I suggest adding your cooked chicken as the next layer. Then I would add my spinach. Lastly, Jess top the pizza off with onions, mushroom, the thin sliced pepper jack, and the shredded Mexican cheese and add more seasoning on top if you like! Once you've fixed as many tortilla pizzas as can fit on your cookie sheet, pop them in the oven for ten minutes or until your cheese is completely melted!

Jess chill and eat some Chili

I Jess made the most awesome Chili and of course I wanted to share this with you as we approach Saturdays & Sunday's with non-stop BASKETBALL!! That's right #MarchMadness! Let me Jess Say I attend Super Bowl parties jess for the food and it's pretty true about march madness until about the final four! Ha, I enjoy basketball, but I can't keep up hey--I'm Jess Being Honest! 
So here's my chili recipe which can be made w/ ground turkey or ground beef, as you continue your healthy food journey Jess add this to the menu! 
Jess what you need:
1Lb lean 80% or greater Ground Beef or Ground Turkey
1 can of black beans
1 can of kidney beans 
2 cans of hot chilli beans (we Jess like it spicy)
1 can of tomatoe paste
2 cans of tomatoe sauce 
Red Onion diced
1 clove of Garlic 
1/2 green pepper diced
Seasonings: sea salt, cumin, pepper, garlic salt, paprika

Optional spicy additions
1 pack of McCormick Chili Seasoning
1/2 of a jalepeno diced in small pieces
1/2 tbsp of jerk seasoning 

In a medium sauce pan with olive oil throw in your onions & green peppers  once they've turned translucent throw in about half of your diced garlic. Remove your veggies place them to the side. In the same pan, begin to brown your meat and season your meat with: cumin, pepper, salt, and garlic salt --do it Jess how you'd usually season ground beef. 
While your meat is cooking, in a separate pot you can begin opening your cans; Jess be sure to drain your kidney and black beans. After draining, add those and the other cans of chilli beans. Dump your veggies in and add your tomato sauce. At this point, I suggest adding the remaining garlic that wasn't cooked and 1 packet of the McCormick Chili seasoning (optional if you need a super chili taste which I get from Cumin ) and any other additional seasonings (cumin, salt,etc..). I hope you haven't burned your meat whoops lol Well take your meat and drain off any excessive grease and add it to the big pot! At this point if you'd like add your additional spices and for those that for your chili to have a thick/hearty texture go ahead and add your one can of paste along a swirl of water to the can( don't act like you've never seen your momma and them do this part) --#JessSayin! So now that everything is in the big pot let it simmer on low for about 20-30minutes this allows for all the ingredients to get to know each other! Feel free to add sour cream, cheese, or even bacon if you're not dieting! Don't forget to share, like, and comment!

Apple Crisp Cupcakes

What's better than apple pie? I'm glad you asked, Apple Crisp Cupcakes! Yes. I know. I Jess want to continue to support the healthy movements of 2016. So I was going to a brunch with my Sorors and some of them are super dieting right now and I didn't want to be the "un-sisterly Soror" to bring in the scrumptious desert that everyone hated to eat because of its calorific power, so I jess went ahead and remixed a few recipes. Now while the recipe contains sugar, remembers its also always about portion control.. Jess let me know what you think!

Jess what you need:
 3 Granny Smith apples (jess slice them up)
1 cup of orange juice
1/2 cup of oatmeal or Two packages of your favorite instant oatmeal  (Jess in case your curious, I used the Cranberry, Apple, and Oatmeal instant Blend)
1/3 cup Brown Sugar
 2 slices of lemon
1/3 cup of sugar
3 taps of butter
Cupcake foils/ papers
Cupcake Tin (8-12 cupcake tin)
Preheat oven to 350

Ok.. after the apples have been sliced, in a large bowl.. pour in orange juice, squeeze the two lemon slices, pour in the WHITE sugar only, and one tap of butter. Mix all of this goodness together. In another bowl take the brown sugar, oatmeal, and remaining butter to the side...After mixing everything all that together.. Jess take your cupcake foils/papers and place them in the cupcake tin. Place the apple mixture in each tin. After each tin has been filled, take the oatmeal, butter and brown sugar mixture and sprinkle it on top of each cupcake tin! Jess Sprinkle away! Once you've topped each tin with the oatmeal sugar mixture bake in the oven about 10-15mins or until the apples are soft and the brown sugar has caramelized!!

Soo I was in a rush and didn't take a picture after they were done..But I got a text from a Soror's BF who came over after we left and he ate all of them! LOL [ I'm Jess Sayin' they must be good]

Jess Skrimp & Grits

Yo What's Poppin'! There have been plenty of Saturday mornings when I wake up and jess want a nice southern dish.. So one day I explored a couple of  recipes.. obviously because I'm jess that great, I was able to put together my own "Jess Skrimp and Grits". This is an awesome dish to cook for a large group as well as a creative dish to bring to brunch.


Jess What You Need:
Skrimps [Jess one frozen or fresh bag]
Garlic Salt
 Parsley
Old Bay Cajun Seasoning
Pepper
Sea Salt 
1 cup of Instant Grits
4 tablespoons Butter
3 cups of water
1/2 Chicken Bouillon Cube
Cheese
4-6 strips of bacon [Jess fry and crumble]

Jess fry some bacon..put it to the side...Now jess take those skrimps and clean them. Wash em' Defrost them..whatever needs to be done. Pull off the tails at cleaning. This is jess a recommendation, but it makes for a much better meal [Jess Sayin]. After cleaning, LIGHTLY season with garlic salt,old bay cajun seasoning, parsley, pepper, and sea salt.. Take a skillet and heat it up with about 2 tablespoons of butter. Once the skillet is hot throw the skrimps in the heated skillet.  While these are cooking go ahead and take another pot to start your grits. You'll need 3 cups of water, half of a chicken bouillon cube let this begin to boil. Once the "chicken broth" mixture is at a rolling boil add in your 1 cup of grits. I hope you were watching those skrimps! They should be done by now [10 mins or less]..  Once your grits are done, throw some cheese, and butter on them bad daddies! Take that bacon and crumble it. Plate your meal and garnish with bacon [Duh!] So tell me what you think! Like, Share, and Comment..

Jess My Seafood Boil

Holy Crab Legs!


So I made my own crab boil seasoning and also created a butter garlic drizzle!
It was so good and also so easy to make. I made it because we bought a shit ton of these for a good price and I was jess trying to get creative.

  I really recommend thinking about how you like your crab to be seasoned and also possibly the crabs a little seasoning ahead of time so that the flavor really sticks. Making sure they are thawed is a good idea but its not really necessary.

Try it for yourselves and let me know what you guys think about it!


 Jess what you need:
2LBS of thawed or close to thawed crab legs
1 Garlic Cloves
3 stems Parsley
3 pats of Butter
2 Bay Leaves
1 teaspoon of Old Bays Seasoning
1 teaspoon Cumin
1 tablespoon Red Cayenne Pepper (we like the spice)
1/2 teaspoon Sea Salt
1 teaspoon Pepper
Garlic Salt
 4-6 cups of water depending on your pot
13 x 18 Long Pan
Skillet


In a large pot, boil 4-6 cups of water. (20 minutes) depending on your stove type. Bring to a boil. Once its boiling: add bay leaves, old bays, cumin, cayenne pepper, sea salt, pepper, and garlic salt. Essentially your water should look deep red. Once the water is rolling with boil, add your crab legs.
Once your crab legs have boiled for about 10 minutes.

While your crab is boiling preheat oven to broiler setting (LOW).
As crab is boiling. In a skillet add 2-3 pats of butter, garlic chopped up, and parsley. Once the garlic is starting to brow remove from heat. Be sure not to keep crab in the water after 15 minutes, you don't want to over cook your crab legs! 
Remove crab from pot into your long pan. Once you've got them in the pan. Drizzle your butter all over them. Put them in the broiler for 3-4 minutes.

Jess Sick & Spicy Chicken Noodle Soup

..I clearly wrote this blog during the summer time [Jess Sayin] and I'm not changing the context.. So jess imagine I wrote it on a snowy Chicago winter day LOL..However, this recipe was very clutch during a summer cold..Enjoy it either way!!! I'm Jess Chef'n!

  So the other day on a HOT 90 degree day Bae was sickmean coughing over everything and jess scaring me! So I googled a couple of recipes, I've made soup before but I think its important if I'm going to be cooking soup in the middle of the summer, it needs to be healing! [HALLELUJAH]...Don't mind me I Jess be praising the Lord! I think it is also important to be sure to put ingredients in the soup that are fresh and clear liquid as those are all suggestions and are "google-accurate" ways to cure a cold...!! [Jess Sayin]do your research; I also didn't want to spend too much time in the kitchen because I had other things to do! So below "Jess Sick & Spicy Chicken Noodle Soup" which is all cooked in One Pot.

2 skinless Chicken Breasts
 Vegetables of your choice
Onions
Salt
Pepper
Garlic
Parsley
Italian Seasonings
Basil
16 oz. Chicken Broth
6 cups of water
Teaspoon Jerk Rub Seasoning [Walker woods is my preference]
1 Cup Multi-colored rotini pasta [Jess my preference]

Now first, wash your hands [Jess Sayin] cleanliness is important here people. Season your chicken lightly salt and pepper put it to the side. In a large pot add 6 cups of water, 16oz chicken broth,garlic and onion, vegetables of choice, teaspoon of jerk rub,parsley, Italian seasonings, basil, and add chicken breast[whole]..once you start to smell the delectableness[15-20 minutes], take the chicken breast out and begin to shred the chicken [shredding literally pull the chicken apart] now.. some pieces may not be done and that is OK. After you've shredded your chicken throw it in the still boiling cooking chicken broth with all of the other ingredients. Let it cook for about 10 more minutes. After that, place your cup of rotini  pasta into the pot with the now delicious-smelling pot. The noodles will begin to cook and soften in about 8-10minutes. Once those are soft enough for your sick person to enjoy! Serve!!! [Jess Delicious] 
Obviously, I want you all to serve cooked food--be sure that your chicken is done if its very raw when shredding its ok to throw it back in the pan for further cooking.

Jess Fry Those Salmon Croquettes!

Oh Hey! I hope y'all have been eating good! I know I have...I'm Jess Sayin' . Tonight lets get a little fancy and have some healthy fried foods. Yes, I said Healthy and Fried in the same sentence.
 I'm Jess Fry'n some Salmon Croquettes, A Spicy Red Cabbage & Jess Plain White Rice! So, what do you guys think, interested? Now I'm usually one that is against canned fishes..its odd but I've tried this very recipe with fresh salmon and it wasn't as satisfying..I'm Jess being honest... You are free to try it but its a lot of work to not get the best results of a homemade southern style croquette. 


Jess Fry Those Salmon Croquettes! 
Coconut Oil (Yes to jess fry those croquettes)
2-3 cans Salmon (I use Chicken of The Sea Pink Salmon)
2 Eggs
Bread Crumbs (OR just use the bread in your kitchen..Jess Sayin)
Lemon
Onions (jess minced)
Green Pepper( jess minced)
Salt
Pepper
Garlic Salt
Yellow Corn Meal (Jess to coat the salmon patties)
Mixing bowls

**The cans of salmon needs to be De-boned, and DE-skinned. once all the icky stuff has been removed put all the pink salmon in the mixing bowl**. Season the salmon with salt, pepper, garlic salt, add the green pepper, and onion.To remove the "fishy" taste I always squeeze three or so lemon wedges to my mixture as well. Crack the egg and add the breadcrumbs! Take them hands and mix it alllll together!! Once its all mixed together create a patty. On a separate plate, sprinkle the corn meal just to cover the patty so it can be fried. Jess fry the patties in coconut oil I say about a three tablespoons in a skillet and jess throw the patties in and fry until they are golden brown.

Jess-A-Sweet-Honey Salmon

What's Poppin' y'all!! This jess might have been the easiest recipe I ever made. It took me about 30minutes to prepare. Here we have, Honey Limed Salmon ...with veggies and a brown rice medley.

Salmon
4 Tablespoons of honey
4 Tablespoon of Butter/margarine
Sea Salt
Pepper
Garlic
1/4 cup Lime Juice
Flour
 Preheat oven to 400 Degrees.

First over medium heat, add 3 tablespoons of the butter/or margarine once it has melted in the skillet jess add 3 tablespoons of honey, garlic, and lime juice and let it sizzle until it gets a little brown  [Jess about 1-3minutes].As that is sizzling, hopefully i don't have to say this but jess in case be sure to wash the salmon [Jess Sayin] common sense ain't common. Season the salmon with sea salt and pepper to your liking, after seasoning take a teaspoon of flour and sprinkle it on the salmon. After you've done this, take the remaining 1 tablespoon of honey and drizzle it on the salmon. Take the salmon to the skillet with heated honey mixture and cook for jess about 1-3 minutes once the salmon has been submerged into the warm mixture and browned remove and put in the oven for about 20 minutes. Once it is done pair with what you love, I choose a brown rice medley [Shout-out to Uncle Ben] and a vegetable medley [Jess Yummy]

Salsa Verde Skrimps

 Yo! What's poppin'! How is everyone's healthy eating journey going? Lets Jess keep eating healthy!
So I had some left over Chipotle Salsa Verde so I made some Skrimps Con Verde.. Easiest dish ever.. It literally took me 15 minutes or less to make this! All you need is Skrimps, Butter, and Salsa Verde in a hot skillet.. a super yummy healthy delights. This is also something you can throw over brown rice, cabbage, or spinach salad and/or romaine lettuce. I hope that you add this on your "Jess Try it" list!

Salsa Verde Skrimps
 Butter
Garlic
Shrimps (thawed and cleaned)
Chipotle Salsa Verde (I've used store bought La Victoria medium) 
Hot Skillet

Jess Stuff The Pepper ..You CHICKEN

Yo Whats Poppin!! As you continue to eat healthy consider my "Jess Stuff The Pepper"
I'm Jess Sayin' its so easy and so delicious, in this particular recipe I'm about to share, I made it with Chicken, I know Stuffed peppers are traditionally with Beef..but don't be shy explore your pallet and Jess stuff the pepper with Chicken!! Stuffed Peppers take a little bit of time, but its something you can prep perhaps on a Sunday and cook any day of the week. Jess take a look at how I do it, and let me know when you try it! Jess Stuff the Pepper 
Salt
Pepper
Onion
Garlic 
Green Peppers (or whatever peppers you like)
2 cans Tomato Sauce (I use a 32 oz can)
Chicken Breast (jess season it, cook it in like 1/3 of water, and shred it)
1 Cup of Jasmine Rice (jess cook it how u make rice DUH)
2 Cups of Water (jess in case you don't know how to make rice--you'll need water to do so)
Preheat oven 350

Jess put maybe a 1/3 cup of water in a skillet, as it boils season your chicken, i've added the seasoning I used above. Be sure to start cooking your rice; I like jasmine rice, I've read that it is healthier than regular white rice and has some benefits, it also cooks faster than Uncle Bens:: I'm Jess Sayin maybe try something new.
  Once the chicken is done, CHILL you can't pull apart scolding hot chicken trust me I've tried and its pretty damn HOT.. SO let it sit for just about 5 minutes or so..
 Once you've drained the rice of your choice, put it back in the pot and then dump the tomato sauce and mix it together. Once you've shredded the chicken also add the chicken to the mixture.

Now wash the green peppers, you have to cut the top off of the pepper and take the seeds out, once you've cleaned and filled the pepper .. Take the extra sauce and cheese to top all the filled peppers. Let them bake for about 25-30 minutes and the cheese should have melted by this point. Jess Eat Healthy..New Year New Food!



Yo Whats up! Happy New Year or Whatever!
 Are you looking for YUMMY healthy options as you start your new year resolution to be in shape? Eat at home more? Cook meals? Eat better? Well have no fear Jess Chef'n is here! Try my easy Chicken & Sweet Potato Bake. Healthy eating is cool..and we are
back to eating healthy too; however, I was too tired to be bothered and wanted to be sure to get some work done while cooking! So I Jess threw it all in the oven cut up sweet potatoes, onions, garlic, lightly seasoned some chicken breast with your favorite spices and in the oven to bake for about 30-45minutes depends on the type of meat you use and how big/thick it is...  Then I gathered an organic medley of spinach and red cabbage --sauteed it in onion and garlic with olive oil.. Boom a very quick meal with natural flavors. I'm jess sayin you have the decision to make healthy choices. Its all about portion control as well.. I'm Jess Sayin! Jess my Healthy Chicken & Sweet Potato Bake-
Boneless Chicken Breast
Salt (Jess how you like it)
Pepper (Jess how you like it)
Garlic salt (Jess how you like it) 
Jerk Seasoning (Jess because we like to keep it spicy)
1 Garlic Clove
2 Sweet Potatoes (Jess chop them into slices)
1/2 of a Chopped Onion
Red Cabbage (I used a 1/2 head of cabbage, but jess adjust for your family/portion)
2 cups of Organic Medley Spinach
Olive Oil
Oven on 375-400 (I'm Jess estimating not too sure but pretty sure this gets chicken done in 40mins [Haha hey..] ..I'm Jess Being Honest!! )
